Got bananas that are turning brown and you don’t know what to do with them? BAKE THEM! There are so many recipes out there for ripe bananas but one of my (and the kids’) favorites are these blueberry banana muffins.
My kiddos like to do this thing where they eat so many of one thing that I buy it in bulk, then the moment we have a ton of that, they no longer eat it. Yours too? COOL.
I’m going to cut to the chase, because I really loathe having to scroll for an eternity to get the recipe.
Ingredients
- 4 large ripe bananas- mashed
- 1 cup blueberries
- 1 & 1/2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup sugar ( I like raw and unrefined sugar)
- 2 eggs-beaten
- 1/3 cup butter-melted
Directions
Step 1: Preheat oven 350O. Lightly coat muffin tin with olive oil and lightly dust with flour to prevent sticking. Add (or sift) flour, baking powder, baking soda, and salt together in a bowl; set aside.
Step 2: Gently mix bananas, eggs, sugar and melted butter in a separate bowl until well combined. Fold into flour mixture until smooth. Add in blueberries.
Step 3: Spoon into muffin tin-about 2/3 full. Bake in pre-heated oven until the tops spring back when gently pressed and a toothpick comes out clean when poked. Allow to cool briefly in tin, then remove to a wire tray to finish cooling.
