Sweet Potato Black Bean Chili

Ingredients
  

  • 2 medium Sweet Potatoes peeled & diced
  • 1 tbsp Olive Oil extra virgin
  • 1 small Onion diced
  • 1 Bell Pepper diced
  • 3 Cloves Garlic minced
  • 2 tbsp Chili Powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 can black beans 14.5 oz
  • 2 cans diced tomatoes 14.5 oz
  • 2 Cups Vegetable Broth
  • Salt & Pepper To Taste
Optional Add-ins
  • 1 lb ground beef or turkey
  • Yogurt or Sour Cream Topping
  • Shredded Cheddar Cheese Topping
  • Avocado Topping

Method
 

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add onion and bell pepper and sweet potato; sauté until softened (3–4 minutes).
  3. Stir in garlic and spices; cook until fragrant.
  4. Add beans, tomatoes, and broth.
  5. Bring to a boil, then reduce to a simmer.
  6. Cook 20–25 minutes until sweet potatoes are tender.
  7. Season to taste and serve with desired toppings.

Serve over rice, with cornbread, or topped with Greek yogurt and avocado.
